Two Stories. One Very Happy Table
One story began in Molfetta, in the province of Bari, Italy. The other began around a very full table in the American South. There were bakeries and grandmothers. Farms and gardens. Campfires and flowers. Homemade food, plenty of people, and more than a little time spent around a fire.
Thousands of miles apart, we were both learning some of the same things: Work hard. Make it fresh. Feed people well. And always make enough for one more. Eventually, those two stories found their way to the same kitchen in Paso Robles. Welcome to Bel Sorriso.

Cosimo — From Molfetta, With Love
For Cosimo, food has never simply been something you cook. It's part of where you come from. He grew up in Molfetta, a seaside town in the province of Bari, Italy, surrounded by a food culture where good ingredients, family traditions, and everyday life are all tangled together.
His education started early. As a young boy, Cosimo began helping in a neighborhood bread bakery, learning to make focaccia and traditional breads with his own two hands. Home was connected to the land, too. He grew up around a family farm while his father grew beautiful flowers—roses, carnations, tulips, and more—to take to market. It taught Cosimo to appreciate where things come from, to work with his hands, and to understand that good food doesn't need a lot of fuss when you start with good ingredients.

From Italian Kitchens to the Central Coast
At 19, Cosimo left Italy for California. Over the years, he worked his way through restaurant kitchens throughout the Central Coast and eventually became a head chef. But Molfetta never really left him. You can still find it in the way he cooks today—in the seafood, the bread, the sauces, the simplicity of fresh ingredients, and anything that comes near the live fire.

Kira — Just Make Room at the Table
Kira's story began thousands of miles away in the American South. Sundays at her grandmother's meant a full house: family, friends, adults, kids—whoever happened to show up. The kitchen was busy and the table was crowded with homemade macaroni and cheese, green beans, biscuits, mashed potatoes, sweet potato soufflé, black-eyed peas, and roasts. Kira was right there in the kitchen learning that food is one of the primary ways we take care of people.
Then her dad introduced her to another kind of kitchen: a Jeep, a campfire, and the great outdoors. Long road trips and camping trips meant cooking dinner around an open fire, teaching Kira to improvise, trust her instincts, and become comfortable with live-fire cooking.
And then there's the garden. Kira has always loved growing things. If you see tomatoes, herbs, or seasonal produce growing in our Tower Gardens around Bel Sorriso, there's a pretty good chance she's already figuring out how to get them onto your plate.

From Molfetta to Paso Robles
A kid from Molfetta who learned to make bread. A Southern girl who learned to feed a crowd. He grew up around a farm; she can't stop growing things. He loves cooking with fire; she grew up cooking over one.
Looking back, Bel Sorriso may have been inevitable. Today, our kitchen is a little bit Molfetta, a little bit Southern hospitality, and very much Paso Robles. It's wood-fired pizza coming out hot. It's seafood inspired by the flavors Cosimo grew up with. It's tomatoes and herbs we actually grew. It's friends lingering over another glass of Vina Robles wine. It's someone insisting they're far too full for dessert... and then ordering the Bel Sorriso Chocolate Soufflé anyway.
Put good food on the table and people have a funny way of gathering around it. That's what we want Bel Sorriso to be. A place to come hungry. Bring your people. Try something new.
